This light and refreshing dip, is super easy and only requires 5 ingredients!! It is 100 percent vegan and a great protein kick from the beans and an iron boost from the sundried tomatoes. You can dip in pitta and bread, serve it on salad or on top of rice and stew. Delicious!!
- 400g tin cannellini beans (drained)
- 8 sunkissed/dried tomatoes in olive oil (no need to drain, use about a tbsp of the olive oil)
- juice of half a lemon
- tsp paprika
- tsp cumin
Place all the ingredients in a blender and whizz until a smooth paste has formed. You can leave it a little more chunky if you prefer.
This is great with chopped up olives and capers as well and would be delicious served up on bruschetta. Enjoy!
